As a result of this program, we have substantially reduced or completely eliminated (where possible), the use of oil, salt and added sugar. We may still occasionally use these "bad" ingredients when they're critical to the flavor of the recipe. However, we've modified many of our recipes to exclude these ingredients without sacrificing their deliciousness. If your goal is to eliminate them completely, try using substitutes or leaving them out when you prepare the recipe and let us know how it went in the recipe comments. In March 2019, I completed the Plant-Based Nutrition Certificate program offered by the T. Colin Campbell Center for Nutrition Studies in partnership with eCornell. I learned about the program in 2018 and was excited to have the opportunity to complete the coursework in order to enhance my work as Animal Outlook's Vegan Food and Lifestyle Coach. Certificate plant based nutrition
The first University-based course on plant-based nutrition in the UK has launched. The course has been a team effort involving 17 UK plant-based experts, many of whom are board members of Plant-based health professionals UK. How did this all come about? I was fortunate enough to meet Professor Joy Carter, the Vice Chancellor of University of Winchester, after an introduction from a mutual friend. Prof Carter is a passionate vegan and cares deeply about animals and the environment. It only took the one meeting to decide that there was a need to develop a University-based course on plant-based nutrition for health professionals and that Winchester University would lead the way. By this time, the University had already committed to opening a faculty of Health and Well-being, with degree programmes to include nutrition and dietetics, nursing and physiotherapy. The faculty opens on August 1st 2019 and Prof Simon Jobson, the Dean of the Faculty, has been full supportive of the plant-based nutrition course, which will sit within the faculty.
